Muakacha
Muakacha (moo-ah-ka-cha) is an Arabic word meaning “wrinkled”.
This is where this delicious Middle Eastern desert gets its name.
It is a simple recipe which never fails to impress.
Ingredients
1 pound | Phyllo Pastry (defrosted in the refrigerator)
2 sticks| unsalted butter
Sugar syrup
1 cup | water
¾ cup | sugar
¼ tsp | citric acid
Custard
2 eggs
1 cup | sugar
1 cup| milk
1 tbs | orange blossom water
Method
Step one
– Cover the base of a pan with no-stick spray
– Gently fold each single layer of pastry, back and forth like an accordion, until the pan is full
– Bake at 350°F for 10 minutes
Step two
– Melt two sticks of butter
– Skim any milk solids from the butter
– Pour the butter evenly over the baked pastry
– Return to oven and bake for 10 more minutes at 350°F
Step three
– Mix eggs, milk, sugar, and orange blossom water with a whisk to form a custard
– Remove pan from oven and evenly pour custard over phyllo dough
– Strain the custard to remove any small particles
– Return pan to the oven and bake for another 30 to 35 minutes, until golden brown
Step four
– Cook ¾ cup sugar and 1 cup water for around 30 minutes to make a very thick syrup (thicker than baklava syrup)
– Add ¼ tsp of citric acid or ½ tsp of lemon juice, this prevents the syrup from crystalizing
– Drizzle over the baked pastry immediately after it comes out of the oven
– Let it rest for at least 30 minutes before serving
– Sprinkle with crushed pistachios and dried rose buds
