Friends, From today Kitchen Series bring tiffin recipes (lunch box recipes) for whole week. Today I am sharing tiffin recipe for monday. I made
(1) Val Nu Shaak
(2) Pulao
(3) Roti
I have also packed chaas (buttermilk) and salad with it.
All these items I made within 20-30 minutes and it is definitely a delicious and healthy lunch box recipe for starting a week on Monday.

INGREDIENTS
VAL NU SHAAK
1 cup rangooni val (soaked for whole night)
2 tbsp oil
¼ tsp mustard seeds
¼ tsp cumin seeds
A dry red chilli
Cinnamon, cloves
⅛ tsp hing
Puree of 2 tomatoes
¾ tsp coriander cumin seeds
¼ tsp turmeric powder
¾ tsp red chilli powder
¾ tsp salt
½ tsp garam masala powder
1 tsp gud
½ glass water
PULAO
1 cup basmati rice (soaked for half hour)
2 tsp oil at low flame
1 tsp ghee
½ tsp urad dal
½ tsp cumin seeds
Badiyan, Bay leaf
Dry red chilli
Cinnamon, cloves
⅛ tsp hing
Chopped potato
Chopped carrot
Chopped capsicum
Green peas
¼ tsp turmeric powder
½ tsp red chilli powder
½ tsp salt
1 cup water
ROTLI
1 cup wheat flour
½ tsp oil
Water as required
Pure ghee
