This pasta is so full of flavour and easy to make you will find yourself making it again and again. The recipe is in the description box because I love ya!

The fermented radiatore pasta that I use for this is so good! Have you ever had pasta made from sourdough? I thought it was so cool, and it digests so easily. The taste and texture is amazing as well. I am definitely a fan.

HEALTHY SUMMER PASTA RECIPE

Tofu crumble
3 cloves of garlic, chopped
1/4 of an onion, chopped
1 block tofu
1 tsp garlic powder
2 tsp Italian seasoning
1 tsp onion powder
1 tbsp nutritional yeast
pinch salt/pepper

Sauce
2 cups diced tomatoes (canned)
1 heaping tbsp Italian seasoning
2 tbsp nutritional yeast
2 tsp garlic powder
1 tsp onion powder

Toppings
1 cup cherry tomatoes, chopped
1/4 cup of olives, chopped
1/2 cup of fresh basil, chopped
1/4 cup of fresh parsley, chopped
Pinch salt an pepper

Directions:
1. Boil water for pasta
2. Saute together garlic and onion on medium heat in a large pan.
3. Crumble tofu in a small mixing bowl and add garlic powder, italian seasoning, onion powder, and nutritional yeast. Mix together well and season with salt and pepper (to taste)
4. When the garlic and onion are soft, add the tofu crumble and saute for approx 5 minutes.
5. Mix together the sauce ingredients and add to the tofu crumble and saute together.
6. When the water for the pasta is at a rolling boil, add pasta and cook according to directions on the package.
7. Remove Pasta from water when it is cooked and strain. Add pasta to the sauce and mix together well. Remove from heat.
8. Add your favourite toppings, I added cherry tomatoes, olives, fresh basil and parsley and salt and pepper to taste.
9. Serve and enjoy! Recipe makes 2 large servings or 4 smaller servings.
