Our family loves to eat colorful food because it just means there’s variety and balance of nutrients from meat, vegetables, legumes, herbs, and spices. Whenever I am short of time, I prepare stew using the Crockpot.
Wash & cut your beef (or any meat you prefer).
Arrange the meat in a crockpot. Add:
6-8 cloves of garlic
1 large onion, cubed
2 cans of organic diced tomatoes.
Then season with salt, pepper, bay leaves (plus whatever herbs you want to add).
Cover and let it cook for 6 hours in a crockpot or slow cooker.
After meat has been slow-cooking for 6 hours, add:
1 can organic Garbanzo beans (or bite-size red potatoes)
2 cups Peas & Carrots
Celery & Bell Peppers, chopped
Cook for another hour or 2.
Serve hot on a bed of steamed rice or enjoy the stew all by itself.
